It was a great privilege to be associated with the founding of a Hospitality University in South Africa. The one experience that was both thought and life changing for me was my first visit to CHN in the Netherlands. I was never a great scholar because for me I found the theory extremely difficult to follow, however as soon as I was able to see the practical side of the theory it was all so easy. At CHN the emphasis on the practical side of learning meant everything to me.

All the courses I saw had a practical side to them, how easy it would be for the students! If this was the model we were to bring to South Africa I desperately wish to be part of it.Throughout my business career in the Eastern Cape and all the new ventures my team and I have brought to the Province none have been easy, however all have succeeded. It is with pride that I was part of the original structure of EISS and it is with humility that I now serve as Chairman of the Board of Governors and I praise my colleagues in the Netherlands for persevering with their endeavors, both financially and with effort and time to ensure that this University becomes one of the success stories of not only our Province but South Africa.

Sifra Kooi, alumni of CHN University, the Netherlands and lecturer at EISS prepared the information for this book by conducting interviews and wrote the base text. We like to thank all people who participated and helped to develop this book. The start of EISS / Initiators of EISS / The birth of EISS. The idea which led to the formation of the Educational Institute for Service Studies (EISS) was conceived by the Christelijke Hogeschool Nederland (CHN). The CHN University is based in the Netherlands and since its establishment in 1987 it developed an international focus. The vision was and still is to establish five to seven campuses around the world.

Mr. Klaas Speelman, Director Global Campus Sites, Mr. Bert Vroon, President of the Executive Board and Mr. Klaas-Wybo van de Hoek, Director of the CHN International Hospitality Management Institute, Mr. Douwe Tamminga, Chairman of the Board of Governors,, Mr. Joris Paulussen, IHM staff member, was the team that developed the idea and took the initiative to negotiations between the CHN and the South African business people.

In the meantime a group of South Africans considered the idea of establishing an educational facility. Mr. Isaac Mabindisa, former administrator at University of Fort Hare SA, Mr. John Hughes, owner of the Grand Hotel and Mr. Raymond Mhlaba, First premier of the Eastern Cape, Councilor Louise Swanepoel, Ndlambe Town Council, provided the initiative in South Africa.

Mr. John Hughes approached Mr. Adrian Gardiner (ownner of the Mantis Collection of Hotel Groups) , and a businessman with interest in wildlife conservation and tourism industry, to take part in the developing of a hotel school. During a hospitality conference in Berlin, Germany, delegations from the two parties met, and they discussed establishing a hospitality training institute in South Africa.

After the visit of a panel with Ms. Kurti Mennen as chairperson from the Department of Education in January 2002, the CHN University of Port Alfred was granted provisional registration and accreditation with one of the conditions being that they could not continue with the name, CHN University Port Alfred. After discussion the name: Educational Institute for Service Studies (EISS) was chosen. With this name, the options are open to offer other study directions, for example education, retail business and social work.

In January 2003 EISS welcomed their first thirteen South African First Year students. These students enroled for the international hospitality management, eight week modules. Students from CHN University in the Netherlands came to South Africa to follow modules or to do internship at EISS. There were International Hotel Management (IHM), agric-tourism, Retail Business Students (RBS), Office Management (OM), Educational and Social Care Students. This is now called: the Grand Tour.

To start out on a realistic note, working as a professional in the hospitality industry is no easy living. You are going to work long hours around the clock. It takes an iron will to face all this and more. You'll need to have a selfless, sacrificing nature to see your kith and kin have the time of their life holidaying while you slog to please others. And you'll be expected to never be without a perpetual smile on your face. But the offered perks, the potential for good tips or attaining a high-ranking position, and the benefit of working in a recession-free industry draws potential workforce towards it. If you have all that, you can set up a pretty nice life for yourself.

Enjoying being among people is the first and foremost requirement to be able to chart a course of success in the hospitality industry. The job of a person serving in this field requires one to be people-friendly, adaptable, and energetic. Other traits that will come in handy include the ability to work in a team, problem-solving capabilities, and working in a customer-centric atmosphere. If the smiles on your guests' satisfied faces make you forget all your difficulties - including the pressure of working on your feet for late hours without the weekends for yourself - you are probably tailor-made to suit this profession. On the contrary, a reclusive, introverted personality who likes keeping to themselves, working in a cubicle for a stress-free job, or likes a typical office-hours shift is a complete misfit.

If you know your calling in life lies in the hotel and hospitality industry, you need to take a path that will provide you an edge over the others as far as employment is concerned. You could go in for any of many educational paths to take your plans forward.

Though not always necessary, enrolling for a full-time course is an option. Identify your area of interest and enroll for a full time program affiliated to a specific industry. Choose a program depending upon the eligibility and the time you wish to spend on your education. Chefs, especially, will need some form of culinary school, and those aiming for management will probably be best served by a simple business degree.

Another option is a company-sponsored training program. Join a program that is conducted by an employer or an agency that is associated with employers in your target hospitality industry. Such programs are generally the blend of theory or off-site training at a community college or institution, and practical or on-the-job training at affiliated businesses, similar to an internship.

Finally, you find an employer who will hire a first-timer. This is your 'break-in' period, and it's wise to remember the old Chinese saying, "The temptation to quit will be strongest just before you succeed." The first year will arm you with the necessary and invaluable experience.

Though it has been recognized as a full fledged industry relatively late in history, the hospitality trade is as old as scriptural times. The current trend of globalization, coupled with the exponentially rising spending power of the new world economy is at the core of the boom that the hospitality trade has received in the past few years. But, people who are short-sighted about the many dimensions of the trade fail to see the myriad hues that this industry offers its workforce.

A mere mention of the hospitality industry brings to our mind the images of chefs with high white hats, or pleasant, tidy front desk executives and alert, courteous waiters. It is helpful to be aware of the deluge of other opportunities that await a young hospitality industry graduate. Amusement parks, resorts, golf courses, spas, gyms, retreats, bed and breakfasts, and casinos all fit under the wide umbrella of the hospitality industry.

You might not think of working in a restaurant waiting tables sounds like a fun career, but have you been to Disneyland and seen that restaurant they have inside the Pirates of the Caribbean ride? Or perhaps you've thought of working your way up to head hostess at Ceasar's Palace? Or have you figured how much a wine steward at a South American beach resort makes, all under the warm equatorial sun and drenched in the ocean breeze all day? See, there's more options available than just slinging hash in a truck stop!

Contrary to the common perception, hospitality most definitely does not pertain merely to hotels. We tend to overlook the fact that hospitality has entered our lives in more ways than we can think of. Small and big eateries, coffee shops, ice-cream parlors, lodges, cinemas, workplace canteens, and event management agencies are as much a part of the hospitality industry as hotels and restaurants.

A qualified hospitality professional might have a choice of working as a hotel manager, concierge, front desk manager, food and beverage manager, housekeeping manager and sales and marketing professional. Apart from this, openings in restaurant management, catering, event planning, consulting, and research firms beckon the trained graduates with a modest run of experience.

A common question that comes up: What matters more in the hospitality trade, qualifications or personality? I just came posterior from an interview at century 21 real estate for a receptionists position. The interview lasted roughly 5 minutes I think. She really did not ask me any real interview question. She just went over my resume and said, so you budge to (school's name) then she said you want to be a psychologist/psychiatrist. I said a Psychologist. she asked what grad school I be looking to go to I said that I don't know yet, I'm still looking and that I be thinking about taking a year off. she asked if I have any questions and I just said I considered necessary to know what the position was for.

When I really meant, what are the duties of the mission. anyway she said it's a receptionist position and she then told me what I would be responsible for. She asked me if I was interested. I said yes.. and said that I have applied at another location, which is where she got my resume from.. She consequently asked how much was I looking the get remunerated. I told her a minimum of 12 dollars. She said that I seem a little shy and I a moment ago smiled because I didn't want her to know I was nervous or speak something stupid. She asked if I was good near computer and I said yes.

She said that was a plus.She asked me again if I had any question I said no. Then she said that's it. and confirmed my phone # and said "I'll let you know. It probably didn't play out exactly like this because Ieft little mechanical things out...at one point there was an awkward silence (when she said I be shy) but as I said it was a "real" interview, like what I be expecting. 51 year infirm womanly working near 71 and 85 year outmoded men that want my hours!?
I recently answered an ad for a guarantee company that stated my job would be "full time, 40 hrs/wk, nights and holidays". At the interview, the boss told me that it would be more approaching 46 hours per week providing that the senior officer didn't want the extra hours. Well, he did...so now I get 36 hours per week. At that time, within were exactly five officers. Less than two months after that, we have seven officers. One have agreed to stay on as emergency on-call (basically no set hours).

One is being threatened with firing, one is 85 years elderly, one is 71 years old, one recently have a heart attack and was off work for over two months...at 51, I am the lone female officer there, subsequent to the youngest, and my work so far has been in need incident or problem. My doctor has ordered me to have surgery contained by three weeks. Even though I will miss less than a week of work, I have this odd feeling that I will not get my 36 hours put money on again after I return from surgery.

I've asked the boss and he said that I would get my 36 hours back, no question asked...but...he gives in to the 71 year hoary fellow who is a sexist and thinks the 85 year old buddy can do a better assignment than I can. He has already told other officers within that he fully intends that the 85 year old officer will be taking over my job and that I can own "maybe 8 hours a week". The only wonderful piece about this job is that I work alone and don't hold to be around these dinosaurs more than ten minutes per day.

If You Want to See the World Choose the Hospitality Profession

I realize that nearly the entire planet has been discovered and we cannot turn back the clock and be like Christopher Columbus and find a new continent just like that , but working in the Hospitality Industry you can do your own exploring when it comes time to choosing your place to work. It almost always never turns out as you plan it but the experience helps you grow in so many ways. First it helps you understand how other people live and gives you a sense of accomplishment when overcoming challenges that most people would not be willing to go through. Sort of like Columbus would have gone through when he crossed the ocean back in 1492.

One example for me happened back in 1990. I had just returned from Switzerland having completed my two years there and was eager to return back to Europe any way I could. Finding out about a UK Grandparent Visa which allowed grandchildren of UK descent to work there , I mailed away for a photocopy birth certificate of one of them so I could apply for a visa. It took in all quite a bit of time to obtain the visa so when I flew to London I had only about 600 British pounds on me and three suitcases.

Brimming with confidence I thought I had it all figured out. There was a trade magazine I knew of that was packed with hotel and restaurant jobs. I figured as soon as the jet landed I would find a Bed and Breakfast in London , make a few phone calls and set up some interviews and by week's end have myself a great job. The jet landed early in the morning so when I grabbed my three heavy bags I was really in no mood to shop for the most economical place to stay nor take the Tube. A taxi would do just fine , thank you.

On the tourist board there was a list of Bed and Breakfast establishments around the Paddington station area so I jumped into a taxi and wouldn't you know it but the taxi ride cost me about 40 pounds. The one thing I should have calculated was how expensive the UK was compared to Canada! Almost a tenth of what I had gone in a taxi ride.

I cannot remember off hand what the B and B was per night but it was not Buckingham Palace. A funny thing happened one night when the inn was robbed. Someone had managed to steal and replicate the master key to all the rooms. When the robber was making the rounds he opened up my locked door and woke me up. He excused himself and said he had the wrong room and closed the door. I thought nothing of it and went back to sleep. Next morning I heard the news many rooms were robbed.

The 600 pounds went like that as England was a lot more expensive than I thought it was and the jobs were not as quickly found as I first thought they would be. I ended up working in Ashford Kent at a hotel that was opening to take advantage of the Chunnel that was being built at the time and the business it would bring. It was an exciting opportunity as an Assistant Conference and Banqueting Manager to train a new staff and help during it's launch.

Subsequently I was able to help out in the Dining Room afterwards but the real reward was having gone through something unforgettable. I only spent up to 6 months there as I was completely broke having started at the hotel living off a credit card. But to start with just a destination and not knowing what could really transpire was something that someone who is single , living out of a suitcase , and with a plane ticket could only experience.

I wouldn't recommend it for the faint of heart , or for people who need everything exactly perfect before they start something. But if you are like a Columbus and want to explore new worlds , the Hospitality Industry can provide that opportunity.
